Vegetarian dishes to lose weight: Ratatouille

Ingredients (for 2 people):

1 Tbsp olive oil 3 onions 2 courgettes 1 aubergine 2 carrots 1 green pepper 1 yellow pepper 1 red pepper 4 tomatoes 1 pack of tomato passata (500 g) salt pepper oregano vinegar 1 pinch of sugar

1 portion contains about 272 kcal
  • Wash, clean and cut the vegetables up into pieces.
  • Heat the oil in a pan, gently fry the onions until translucent, add the vegetables and fry gently for a little longer, then add approx. 1⁄2 l water.
  • Add the tomato passata and oregano, then simmer on a low heat for approx. 20 minutes.
  • Season with salt, pepper, vinegar and sugar to taste.
